How oysters are graded
Oysters are graded as select, standard, counts, mixed. Counts are the largest, selects are large uniform oysters, and standards are the everyday shucking and roasting grade. "Mixed" means ungraded. Sellers may add their own wording, shown alongside the standard grade.
Units and preparation
Oysters are sold by the dozen, each, quart, peck, half bushel, bushel, either live in the shell or shucked — the preparation appears on every listing. Shucked oysters are usually sold by the quart or dozen; in-shell oysters by the peck, half bushel, or bushel.
Freshness and pickup
Listings show the seller's latest availability confirmation and expiration. Keep live oysters cold (not submerged in fresh water) cup-side down, and use shucked oysters within a few days. Pickup details come from each seller's profile.
Wild vs. farmed
Where the seller specifies it, listings distinguish wild harvest methods (dredge, hand tong) from farm methods (cage, bottom planted), and origin reads "Chesapeake Harvested" or "Chesapeake Farmed" only when claimed — otherwise "Local Seller."
